Afghani Meat Karahi



Ingredients,

baby lamb meat/goat meat small pieces 500 gm
tomatoes 4
green chilies 3-4
fresh coriander for garnish
salt 1 tsp
black pepper crushed 1/2 tsp
white vinegar 4 tbsp
ginger minced 1 tbsp
garlic minced 3/4 tbsp
oil 1/4 cup
whole black pepper 1/2 tsp
whole coriander seeds 1 tbsp
whole cumin seeds 1 t

Directions,


1. In a bowl add fresh minced ginger, garlic, and 4 tbsp white vinegar,1/2 tsp salt, 1/2 tsp crushed black pepper, 2 tbsp oil. Mix well.



2. Marinate meat in this mixture for 2-3 hours. salt and vinegar will act as meat tenderizer.



3. Dry roast 1 tbsp whole cumin seeds, 1 tbsp whole coriander seeds, 1/2 tsp whole black pepper and 2 dry red chilies.


4. crush it. set a side. do not crush it fine.


5. cut 4 skinless tomatoes in cubes, chop green chilies, chop fresh coriander.


6. heat a pan add 1/4 cup oil, add marinated meat, stir on high heat for 5 minutes.


7. Now on low heat with lid on cook it for 30 minutes. stir in between.

8. after 30 minutes add chopped tomatoes.\


9. Again with lid on cook it for 30 minutes. stir in between.


10. After 30 minutes turn the heat to high, add chopped green chilies, 1/2 tsp salt,and roasted crushed spices we made in beginning.


12. Garnish with fresh coriander.
serve hot.

These are the best Pakoras (aka potato fritters) you will ever eat. Yup, I am making that claim because they are, quite simply, the best I’ve ever had in the twin cities, either home or professionally made.
